Ooey Gooey Mexi Dip

There has been a lot of talk about the World Cup lately. I’m afraid I am not big into sports unless, of course, I happen to know one of the players. I have never understood the appeal of watching complete strangers run around after a ball, peddle across the Alps, swim laps in a pool, or wrestle their opponent to the ground. I just don’t get it. I guess if it’s college sports and you attended that particular university… maybe. However, I have accepted that I am the minority in this area. Even my Proverbs 31 Ministries sisters are sports fanatics. They jump up and cheer when their beloved Gamecocks win a game. They look forlorn when their team loses. They take this very seriously, and very personally. While I am oblivious. Honestly… I don’t even know what sport the Gamecocks play.

What I do know… and love… is cooking for sports fans! This recipe for Ooey Gooey Mexi Dip is a fan-favorite, regardless of the sport of choice! Serve with a pile of tortilla chips and you have a hit on your hands. I have made this dip many times and each and every time, everyone has requested the recipe.

So, if you have a gang gathered around your TV watching the World Cup this weekend, consider this cheesy goodness.

Ooey Gooey Mexi Dip

  • 1 can traditional refried beans
  • 3 cups shredded mexican cheese blend (or combine cheddar and monterey jack)
  • 1/4 cup mayonnaise (I know it sounds grouse!)
  • 3/4 cup sour cream
  • 4.25 oz can sliced olives, drained (set aside 1 tablespoon)
  • 4 oz can chopped green chilies, drained (I use mild but feel free to kick up the heat)
  • 2 cloves garlic, minced
  • 3 green onions, sliced (set aside 1 tablespoon)
  • 1 medium tomato, chopped (optional)
Preheat oven to 350 degrees. Spray a quiche dish, pie dish, or shallow backing dish with non-stick cooking spray.
Spread the refried beans evenly over the bottom of the prepared baking dish.
In a mixing bowl, combine 2 cups of the cheese, mayonnaise, sour cream, olives, chilies, garlic and green onions. Spread the mixture over the refried beans. Cover with the remaining cheese and sprinkle with the reserved olives and green onions.

Bake for 25-30 minutes or until hot and bubbly and brown around the edges. Remove from oven and top with chopped tomatoes. (I didn’t have any tomatoes so I went without.)

Note: If you really like a lot of kick, you can also top with sliced jalapenos!

Serve hot with tortilla chips.

You will not be disappointed and neither will the sport fans in your life. This is gooey hot melty yumminess!

Oh my does that look good! I will definitely be making this for Super Bowl next year. I always serve chili at our Super Bowl parties, and this would go very nicely. Although, I most definitely will need to make this before then. Super Bowl is MONTHS away! Thanks for sharing!

LeAnn — I’m so totally with you and your comments about sports. I have often said that if every sport of every kind suddenly came to an end, it would have absolutely NO effect on me whatsoever….except that I would have more time with my hubby! :)
