“Mom! This is something I haven’t seen before. Your son walks into the kitchen and sees his mom and a bottle of beer on the counter. Have I driven you to drink? Do I really smell that bad? Seriously… what’s up with that?!”
This is what came out of Nick’s mouth the other evening when I was experimenting with a recipe. After I finished laughing at him, I let him know that the beer was an ingredient in the recipe. His response… “She Cooks, she gets silly, she falls down. She scars her son for life.”
Nick is quite entertaining! He always makes me laugh. He also frustrates me when it comes to his picky pallet!
I love to use my crock pot. Unfortunately, Nick is not as enthusiastic. I have yet to make anything in the crock pot that he has liked. But… that hasn’t stopped me. I continue to experiment with different food combinations and, in the process, have discovered a few very easy and very yummy dishes. Some of them, including the one today, use already prepared items found in your grocery store. I will be sharing more of these easy recipes in the weeks ahead but, since I used the gals in the office as taste-testers for my All Day Enchilada Beef, I have received many requests for the recipe. I promised to share this one quickly as some want to make it right away!
I used to look at my crock pot as a fall or winter kitchen appliance but, when I got a hankerin’ for slow-cooked bbq one hot July day, I decided that my little red crock pot was the perfect tool. While you do slow cook your meal over a long period of time, the crock pot does not heat up your kitchen like turning on your oven will so your air-conditioner does not have to work extra-hard to keep your home cool
I have found that I now love using my crock pot in the hot summer months. I come home to a great, slow-cooked meal with little effort on my part. The little pot does all the work!
So… if you put your crock pot away in the heat of the summer, pull it out, dust it off, and give this a whirl!
All Day Enchilada Beef
Ingredients:
- 2 1/2 – 3 pound chuck roast
- onion, chopped
- green pepper, chopped
- 1-2 jalapenos (according to taste), seeded and sliced thinly
- 2 14-oz cans mild enchilada sauce
- 4-oz can diced green chilies
- 12-oz bottle Corona
Place half of the onions, peppers, enchilada sauce and green chilies in your crock pot. Place chuck roast on top. Scatter remaining onions, peppers and chilies over the roast. Pour remaining enchilada sauce and the bottle of Corona over all.
Cover, set crock-pot on low heat, cook for 9 hours.
Let sit for about 30 minutes and then remove the roast from the cooking liquid. (It will fall apart as you try to remove it.) You can serve as a roast with rice and beans or shred and serve as filling for burritos which is the way I served it to my sisters.
All Day Beef Enchiladas
Additional Ingredients:
- tortillas (flour or whole wheat)
- shredded cheese
- lettuce
- tomato
- sour cream
- avocado
- cilantro
- salsa
- guacamole
- beans
- rice
- etc (basically, use any combination of toppings that you like)
Shred the beef and wrap in warmed tortillas. You can also add beans and/or rice to the tortilla along with the beef before wrapping. Pile on toppings of choice and serve. Yummy!

Okay, LeAnn, I’ve yet to please my two teen-ager’s and husband with a crock-pot dish! Hmm, but this one, just may fool them. Now, to figure out how to use it, without them seeing it! Too bad there is not an outlet inside the oven!

I also enjoyed and am motivated by your interview with Karen… One question… if you don’t mind sharing… whatdid you do or how did you celebrate each 10lb milestone? I would want to go get something sweet but not sure that is a good idea… Just wondering how you celebrated…
This looks so good. I am going to add it to my meal planning list for the next two weeks. My kids love my enchiladas but it is too hot to bake in the oven. This is a great idea and I can add my homemade sauce that is so easy… 3 T flour 3 T chili powder 3 T veggie oil stir then add 3 C water add seasoning(I add garlic and sometimes chili flakes depending on who is eating it) bring to a boil and it is ready.
