Welcome to “Appleiscious Week!” OK – I made up the word.
Each day this week I will be sharing a different recipe that features apples. I am heading to the mountains this weekend to visit my treasured friend Carol (cantcookalick) and I intend to stop at an apple orchard, wrap my hands around a warm mug of homemade cider, close my eyes and savor the smell and taste of fall.
Today I am sharing a yummy recipe for baked oatmeal. It has apples, raisins and almonds baked inside. It is truly delicious! Or… appleiscious. Hehehehehe! Seriously, everyone who has tried it LOVES it so I do hope you will give it a try. It even reheats well in the microwave so you can make a batch on Sunday and have warm breakfasts during the week.
We will end with my Caramel Apple Crisp recipe on Friday. I know… how unlike me to end with dessert instead of beginning with dessert. Oh well… there is a first time for everything. Maybe I just want to keep you on your toes.
Baked Oatmeal
- 4 cups milk (whole or 2%)
- 1/2 stick butter (1/4 cup)
- 1/2 cup light brown sugar, packed
- 1 teaspoon cinnamon
- dash or two of nutmeg
- 1 teaspoon salt
- 2 cups old-fashioned rolled oats (not quick or instant)
- 1 cup chopped apples
- 1 cup raisins
- 1 cup chopped almonds
- Maple syrup for serving
Preheat oven to 350 degrees. Butter a 2 quart baking dish or spray with non-stick cooking spray.
Combine milk, butter, brown sugar, cinnamon, nutmeg and salt in a saucepan and bring to a boil over medium-high heat. Stir often to keep from scorching. As soon as the mixture comes to a boil remove from heat.
In a large mixing bowl, combine oats, apples, raisins and almonds. Pour the hot milk mixture over the dry ingredients and stir to combine.
Pour mixture into prepared baking dish.
(If you want to take this up a notch and add more calories and sugar… dot the top with butter and then sprinkle with a little brown sugar and cinnamon. The baked oatmeal is absolutely delicious without this extra step and it saves calories. I’m just mentioning it in case you like to live on the edge…. or you are trying to impress new in-laws or something

Bake, uncovered, for 35 minutes. Remove from oven.
To serve, spoon desired amount into serving bowl and then drizzle with pure maple syrup so it sits in a little pool of maple goodness. Y.U.M.!!!

New to your site. Made the oatmeal recipe this am and it was awesome. I love oatmeal and usually have it every morning. This is a meal so will have to curtail eating so much. Can you freeze?

I have never tried freezing the baked oatmeal. It’s always gone within a few days so I have never had to freeze leftovers. I would try putting one serving in the freezer just to see if it works. If you try freezing, let us all know if it works!

PS – I forgot to add, we did not add raisins and used walnuts instead of almonds. Also, put in a pinch of ground clove! The warmed maple syrup is the best topping ever! Thank you again!
We are snowed in here in Oklahoma, so this morning I decided to try your Baked Oatmeal, as a change from my regular Baked Oatmeal recipe. I’m so glad I did! It was the perfect comfort breakfast for this 17degree morning! I added an extra cup of apples, about a tablespoon of ground flax, lots of cinnamon, ground clove, allspice, nutmeg and a pinch of ginger, and all I had on hand for almonds was slivered, they added just the right amount of crunch! I didn’t have any raisins to add, and decided to go without the syrup and extra butter. It was wonderful! Just what my family needed to get their day started. Thank you!
I love this recipe. I was thrilled to find it after chocking down bowl after bowl of oatmeal every morning in an attempt to lower my cholesterol. I also add ground flax seed to the oatmeal and I substitute a mashed banana instead of the butter for a healthier recipe. I have been eating it daily for over 2 months now and I am not tired of it yet!
