Actually, I am sharing my Caramel Apple Crisp recipe today to welcome any new friends who may be popping over from my friend Lysa’s site. I made the Caramel Apple Crisp for Lysa and her family and, judging from the wide-eyed look on her daughter Brooke’s face, it was a hit.
Before I share the recipe, humor me as I share just a bit about my friend Lysa. It’s my site. I can do that. Hah!
Life is filled with good days and bad days; triumphs and tragedies. In the midst of the painful parts of life, God shows up in the most unexpected places. Sometimes it’s a little blessing like someone paying for your latte or the oven repair dude showing up 30 minutes after you call him (thank you oven repair dude!). But sometimes something very rare and special occurs. God sends a blessing in the form of a real life person. Not just any person. Someone who changes your life in the most wonderful ways. Someone who loves you just as you are. Someone who supports you, encourages you, makes you laugh, lifts you up when you are in the pit, and brings you medicine, flowers, and disinfectant when you are sick. (Even if she does hold her breath as she runs in, throws everything on the kitchen counter and then quickly runs out before she turns blue from holding her breath
)
Lysa is that kind of special blessing in my life. I have the supreme honor of calling her friend. She does so much for me and there really is no way of thanking her that would measure up. So… occasionally I bring her sweet family a meal. And, being the amazing and supportive friend that she is, she tells me that it was the best part of her day and thanks me over and over and over. That’s a sisterhood my friends!
In honor of my sweet friend, and to welcome visitors who popped over from her site, here is my recipe for Caramel Apple Crisp. Make it for someone you love. I did!
Caramel Apple Crisp
- 12.25 oz jar caramel ice cream topping
- 1 teaspoon cinnamon
- 6 Granny Smith apples, peeled, cored and thinly sliced
- 2/3 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1 stick butter, cold (1/2 cup)
- 2/3 cup quick-cooking oatmeal
- 1/2 cup chopped pecans
- 2 tablespoons additional butter
Preheat oven to 350 degrees. Spray an 8 or 9 inch square baking dish with non-stick cooking spray and set aside.
In a large mixing bowl, stir the cinnamon into the caramel sauce. Stir the apples into the caramel mixture and spoon into the prepared baking dish. (The dish will be very full but the apples will cook down.)
In a separate bowl, mix the flour and brown sugar together with a wire whisk. Cut in the cold butter with two knives or a pastry blender until the mixture looks like coarse crumbs. Stir in the oats and the pecans.
Pour the mixture evenly over the apples. Dot with the two tablespoons butter.
Bake for about 45 minutes or until top is golden and the apples are tender. Remove from oven and let sit for about 30 minutes.
Serve warm with whipped cream or vanilla ice cream. (I like to sprinkle a little cinnamon around the crisp and over the ice cream. It tastes yummy and makes your dish look extra special.)
FYI… our P31 UPS dude said this is the best apple crisp he has ever had. We love our UPS dude

I was so happy to find you from Lysa’s blog this morning. I have loved to cook and bake all my life but for several years after a heart rending divorce I just couldn’t seem to find the desire to cook anymore. I used to cook and bake and share with everyone but I became so depressed that I turned away from something that gave me joy and peace. Fall and winter cooking have always been my favorite seasons and I have missed it so. You encouraged me to go home and put on a huge stock pot of yummy comforting vegetable beef stew to share with my folks and Grandmother and my office tomorrow. I had to look at your Caramel Apple Crisp recipe so I can try it tonight also (my daughter loves my Apple Brown Betty so I bet she will really love this!).
Thank you, LeAnn for encouraging me. I never saw my love of cooking and sharing as a gift from God, but what you said in your blog made so much sense. I have always loved the “fluffy stuff”, and put all my heart into home made gifts, wrapping and cooking but just never thought it was a spiritual gift. This coming fall is going to be extra special because I will be baking and cooking my heart out now and blessing others with the goodies!

Historically, I’ve had a hard time eating cooked apples, but I tell ya….this caramel apple crisp really makes me want to try it again! Looking forward to receiving more good recipes!
Oh my goodness this looks so delicious! I am going to have to make this recipe soon. When I was in high school, I thought I was the “apple-crisp-making queen”. It was my favorite dessert. But I lost that recipe and moved on to more important things, like mac n cheese and hamburgers and chicken in every way way imaginable. Thanks for this recipe! I know it will bring back memories. I am encouraged as I read your site and print out some of these recipes that make my mouth water just reading them. I have a dilemma that you might be able to help with…I don’t really enjoy cooking. I love to eat good food and want to do a good job for my husband who is a really good cook – but somehow my meals are not all that great. Can you give me a better perspective on the “love of cooking” and maybe some pointers as to how to become a better cook – I’m all ears!
