EASY Perfect Pecan Pie

Today we are visiting the kitchen of Ariel Lawhon. Ariel is an amazing author and the Assistant Director of She Reads, an online fiction book community. And, according to her husband, Ariel also makes a mean pecan pie. In fact, he doesn’t consider it Thanksgiving or Christmas without one!

I glanced over this recipe and decided to add “easy” to the title. It sure looks simple and around the holidays, we could all use more “simple” recipes.

Anyway, I sure am excited to try Ariel’s mean pumpkin pie. Hope you are too! Maybe I’ll read one of her books while I’m eating her pie? Hmmmmm… sounds like a recipe for contentment :)

Ariel’s Easy Perfect Pecan Pie

Ingredients:

  • 1 refrigerated piecrust
  • 3 large eggs
  • 1 cup brown sugar
  • 3/4 cup light corn syrup
  • 2 tablespoons butter, melted
  • 2 teaspoons vanilla
  • 1 1/2 cups pecans

Preheat oven to 350 degrees.

Unfold pie crust and fit into 9-inch pie plate. Fold edges under and crimp.

Stir together the remaining ingredients in a large mixing bowl. Pour into pie crust.

Bake for 55 minutes or until set.
