I am sooooo going to make this!
This yummy-looking recipe is from my friend Rachel. In addition to being super sweet, super smart, and super funny, Rachel is a great Bible teacher and a wonderful, wonderful friend. And, if that wasn’t enough, she is an author, a speaker, and the senior editor of Proverbs 31 Ministries daily devotions, Encouragement for Today. Wow… my friends are so cool. Now they are your friends too. And that makes you cool. I am surrounded by coolness. I need to find a sweater.
Rachel told me that her in-laws grow sweet potatoes on some of their land so, this time of year, everyone in the family has crates of sweet potatoes in the pantry! This recipe is a favorite of Rachel and her family. She says the spice-fragrant, southern-style sweet bread tastes great with a cup of coffee. Yum! I can’t wait to make it. Thanks Rachel!
Glazed Chocolate Chip Sweet Potato Bread
- 2 1/2 sticks of butter (1 and 1/4 cup)
- 3 cups sugar
- 6 eggs
- 5 1/4 cups flour
- 1 tablespoon baking soda
- 1 1/2 teaspoons salt
- 1 tablespoon cinnamon
- 1 1/2 teaspoons nutmeg
- 3/4 teaspoon ginger
- 3/4 teaspoon cloves
- 2 1/4 cups chocolate chips
- 2 1/4 cups chopped nuts (pecan or walnut)
- 2 1/4 cups sweet potato, cooked (or canned) and mashed
Preheat oven to 350 degrees. Grease loaf pans. (Rachel says this recipe yields 2-5 loaves depending on what size loaf pan she uses. Sometimes she makes full size loaves and sometimes she makes mini loaves and gives them as gifts.)
In a large mixing bowl cream butter and sugar. Add eggs and dry ingredients alternately. Mix in the sweet potatoes then stir in the chips and nuts.
Pour mixture into prepared pans and bake for about 65 minutes or until toothpick comes out clean.
Cool for 15 minutes and then drizzle with glaze.
Glaze:
- 1 1/2 cups powdered sugar
- 3 tablespoons milk
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
Combine all ingredients until smooth.

This is a fabulous recipe! I also grow lots of sweet potatoes and have had to be very creative in what all I want to make with my sweet potatoes!! They seem to multiply! Can’t wait to try it! Thanks! Happy Thanksgiving!
