Baked Pineapple

WOW! I love that so many of you shared your favorite Christmas song or CD with me. As I write this post, it is still a bit to early to choose a winner as you still have time to post a comment. (I am writing this several hours before it will go live.) So… I will post the winner later today.

In the meantime, my sweet friend, Holly, is sharing her recipe for Baked Pineapple with us. It is super easy and she says its a favorite in her family. They make it for every holiday meal and it goes with anything.

Holly is Lysa’s Executive Assistant, best friend, and a servant to everyone God places in her path. She shares bits of her life on Lysa’s blog on “Holly Days.” For a peek, visit http://lysaterkeurst.com/category/holly-days/. Holly is as sweet as they come and her posts on Lysa’s blog truly reveal her heart for others.

Here’s Holly’s family recipe for Baked Pineapple. I’ll be back later with the winner of the CD!

Baked Pineapple

Ingredients:

  • 1/2 cup butter (1 stick)
  • 1 cup sugar
  • 4 eggs
  • 20 ounce can crushed pineapple
  • 6 slices of bread, cubed

Preheat oven to 350 degrees. Grease a 1 1/2 quart baking dish.

Cream the butter and sugar. Add eggs one at a time and beat well. Stir in pineapple and bread cubes.

Transfer mixture to prepared pan and bake, uncovered, for 45 minutes to an hour or until lightly browned.

Can be served hot or cold as an accompaniment to any holiday meal.

Sweetest Blessings,
LeAnn

I do have one question…when you say slices of bread…is this just white bread, like sandwich bread? Thanks!

Holly Good December 15, 2010 at 10:46 am

Yes, Tasha! Any kind of bread sliced/cubed. (I use white).

One of my favorite Christmas songs is Go Tell It on the Mountains . Have you ever wondered why God announced the greatest birth in human history to a handful of shepherds on a hillside and a few wise men from the East? Perhaps, it was because they were quiet enough to listen…eager enoughto know and available enough to follow!

Yes, it would be good to drain the pineapple! thanks!
