Cheddar Chowder

Friends, we are more than halfway through our holiday recipe exchange. Today we are joined by my friend Lynn. Lynn has a real passion for teens and their moms. As a speaker and author (her first book will be out in April!), she reaches out to the next generation with the revolutionary love of Jesus Christ. But for today, let’s get to know her soup! Lynn is sharing one of her favorite (but odd) soup recipes with us today. And… if you visit her site, she is sharing her family’s history with soups and the holidays, as well as another soup recipe!

Pop back over here this weekend for one of my favorite breakfast casserole recipes. It’s perfect for Christmas as you put it together the night before and then bake it in the morning. I love do ahead recipes over the holidays!

Here’s Lynn’s soup!

Cheddar Chowder

Ingredients:

  • 2 cups diced potatoes (do not peel)
  • 1 cup diced carrots
  • 1/2 cup diced celery
  • 1/4 cup chopped onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Mix above ingredients in a microwave-safe bowl and cover with 2 cups of water. Cover and microwave for 30 minutes on high heat.

While the vegetables are in the microwave, combine 1/4 cup flour with 1/4 cup melted butter to form a paste. Slowly add 2 cups of milk, 1/4 cup at a time, whisking to blend.

Stir 2 cups shredded cheddar cheese into the milk mixture (and 1 cup cubed ham if desired).

After cooking the veggies for 30 minutes, stir the milk/cheese mixture into the vegetables (be sure NOT to drain the vegetables before adding the milk mixture).

Cover and return to microwave for an additional 15-20 minutes or until thickened.

Lynn admits that this will look a little strange at first but… once it is mixed, she promises that it is wonderful!

One question….30 minutes in the microwave, then another 15-20 min. in the microwave????? on HIGH?????
Surely that is a typo.
Other than that, it sounds delish.

Hi Kay!

You know… I thought it was a mistake too but I called Lynn and verified the cooking times and temperature. I’m baffled. But… Lynn is a great cook so I’m going to give it a try. Well… I will probably cook for less time and then check on it :)

Hey Kay,
I always do the full 30 minutues on the veggies, but when I am combining the rest of the ingredients, I just make sure it is all warmed up. The thing I so love about this recipe is that I can start it, walk away and come back!

Okay, so today I tried making this Cheddar Chowder and OH MY GOODNESS it is soooooo yummilicious!!!!! This recipe will find it’s way to our table very often on these cold winter days. Thanks again for sharing this. I’m off to Lynn’s blog to let her know how much I love it!

I make this, but not in the microwave. I boil the vegetables in the 2 cups of water for 15 minutes, then make a white sauce with butter, flour and the milk. After the white sauce is thick add the cheese. Dump the cheese mixture into the veggies and I add 1 cup of ham. Yummy!!!
