Today we have another Christmas tradition from one of my P31 sisters. It sure has been fun getting a peek into their kitchens, hasn’t it. This recipe for Hobo Bread comes from one of our awesome She Seeks gals, Shannon Primicerio. Shannon is a speaker, author, and all around amazing woman of God. Here’s Shannon’s recipe for Hobo Bread. The recipe has been handed down for four generations so she has no idea how it got it’s name. Her mom has baked this bread every Christmas for as long as Shannon can remember. She wraps it in red cellophane with white ribbon and gives it to neighbors, teachers, friends, etc. Then… they eat some while opening presents on Christmas morning. She says it’s a perfect treat for coffee lovers
Hobo Bread
Ingredients:
Mix together and set aside to cool completely:
- 1 cup raisins
- 1 cup chopped dates
- 2 cups strong coffee
- 2 teaspoons baking soda
Meanwhile, cream together:
- 1 cup sugar
- 2 tablespoons butter, room temperature
Using a mixer, slowly add the following ingredients to the creamed butter and sugar:
- 1 beaten egg
- 1 teaspoon vanilla
- 1 teaspoon almond extract
- 2 cups flour
- 1/2 teaspoon salt
Mix coffee mixture into batter until combined.
Fill loaf pans a little over halfway full. Bake for 1 hour in preheated 350 degree oven.
Cool for 10 minutes before removing from pans.

2 questions. Plain flour? How many pans and are they greased and floured?

Sharon: Great questions! Yes, plain flour. And the recipe makes 6 smaller loaves or 3 regular sized loaves. I’ve done it both ways. You can also freeze the loaves if you bake a bunch at once. The pans are greased but not floured. Let me know if you have any other questions. Merry Christmas
