Karen is an idea woman. Seriously! She thinks of cool stuff to do for others without even batting an eye. Ideas just flow out of her naturally. That, and a sweetness that should be bottled! Today she is sharing a really cool homemade gift idea. I love this idea! You can get as creative as you want to get. You can include the entire family!
Friends, meet Karen.
My first book, co-authored with two friends, contained gift-able and edible ideas to not only enjoy as a family, but to present at special occasions. Below is one of my all-time favorites! My family looks forward to them each year and a container of the dry mix makes a fabulous and clever gift for a teacher, coach, mail carrier or other special someone at Christmastime.
Simply mix the dry ingredients and place in an airtight Christmas tin or tub. Or… place in a Ziplock bag and then into another hand-sewn bag made from holiday or plaid fabric. Tie shut with curling ribbon.
Or, for an old-fashioned look, place the ziplock bag in a small brown paper bag that has been decorated with holiday stampers and ink. Cut across the top with deckle scissors for effect. Fold the top over one inch and, using a hold punch, make two holes a few inches apart. Thread thin ribbon or jute twine through the holes to secure shut.
Dry Mix:
- 4 cups quick oats (run through a blender to make a coarse powder)
- 2 cups unbleached flour
- 2 cups whole wheat flour
- 1 cup brown sugar
- 1 cup non-fat dry milk powder
- 3 tablespoons baking powder
- 2 tablespoons cinnamon
- 5 teaspoons salt
- 1/2 teaspoon cream of tarter
Combine dry ingredients and place in gift-giving containers in 2, 4 or 6 cup potions. (Two cups dry mix makes one batch so make sure your batches are divided into an even number of cups). May also be placed in glass canning jars. One batch makes 5 pints or 2 quart and 1 pint jar.) Each 2 cups dry mix, when prepared, makes 10 pancakes.
Place mix in chosen containers and attach a tag (made on your computer or handwritten on card-stock) that reads:
Oatmeal Christmas Pancakes
To 2 cups of this mix, add the following ingredients, alternating and stirring well:
- 2 eggs, well beaten
- 1/3 cup oil
- 1 cup water
Pour batter by 1/4 cupfuls onto a lightly greased hot griddle over medium-low heat. Cook two minutes. Flip and cook until second side is golden. Serve with butter and maple syrup or warmed apple pie filling and whipped cream. Yum!!!

I really enjoy your blog, LeAnn..and your recipes. I will be trying the Ressurection Rolls soon. Only wish I had know about it over Thanksgiving when all the grandchildren were here. There will be another time to try it. I am anxious to try your carmen corn. Have the ingredients on my shopping list.
I will try Karens pancake mix. Love this idea of gift in jar instead of the ususal cookie mix.

Okay, LeAnn, only because I have one of your cook books and the recipes are tried/true (smile) I will experiment and step out of the box to try oatmeal pancakes. [my teenager’s are used to the regular ones!] Are ya sure about this! Ha-ha! Sounds a tad-bit healthy. We do adore oatmeal cookies, [w/ extra chocolate chips!] so I will give it a try. And, if they’re good, – which I’m sure they will be, I’ll make them up as favor’s for the family members to take home Christmas Day! {I guess maybe they can eat them on New Year’s Day} Thank you!!!
