Today I get to share my beautiful (inside and out) friend, Wendy, with you. I simply cannot tell you how much I love this woman’s heart. She is an extraordinary friend and prayer warrior. And… she is an amazing Bible Study teacher. If you are not already doing her online Bible Study with her, pop over and join in! Just visit www.WendyBlight.com to hear from her heart.
If you visit Wendy’s site today, you will also find one of my favorite cookie recipes! I shared a shortbread recipe with mini chocolate chips. These cookies truly melt in your mouth! You can even take them over the top by dipping half of them in chocolate. My preference is, of course, dark chocolate. Y-U-M!!!
In the spirit of an old-fashioned cookie exchange, Wendy is sharing one of her favorite cookie recipes with us! Yeah! And… we are both hoping that you will want to share your favorite cookie recipes too. When you pop over to Wendy’s blog, leave your favorite recipe in the comments. Wendy is giving one random comment a gift card! Woo Hoo!
Here are Wendy’s favorite sugar cookie! The recipe came from the mom of one of her sorority sisters. Wendy says it brings back fond memories of college.
Sugar Cookies
Ingredients:
- 1 cup vegetable oil
- 1 cup butter, room temperature (2 sticks)
- 1 cup powdered sugar
- 1 cup regular sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 4 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- dash of salt
Cream the oil, butter and sugars until smooth. Add vanilla and eggs and stir to combine. Mix dry ingredients together and add to wet ingredients. Stir to combine. Divide dough in half and chill each half for at least two hours.
When ready to bake, preheat oven to 350 degrees.
Roll dough into 1-inch balls and place two inches apart on cookie sheet. Bake for 10-12 minutes.
When cookies are completely cool, frost them with cream cheese frosting.
Frosting:
- 3-ounces cream cheese, room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
Combine all ingredients until smooth.
Enjoy!
Sweetest Blessings,
LeAnn

Frosted sugar cookies are my all time favorite Christmas cookie, and I make myself wait until close to Christmas to make them or I will gain 5 pounds before Christmas cos I can’t stop eating them! I haven’t tried cream cheese frosting on them before, so thanks for this recipe that uses it, I will definitely try it.
Do you happen to have a favorite biscotti recipe you or a friend would like to share?

LeAnn, thank you for inviting me to be a part of this She Cooks Christmas recipe series. I have made some wonderful new friends who share our same passion for baking. I love you, sweet friend!

A giant kitchen and a cookie fest – sounds wonderful! These sound like snickerdoodles with icing instead of cinnamon and sugar. They’d be so much easier than trying to roll and cut. Going to be trying them.
