Cornflake Clusters

I did a little experimenting… with dark chocolate :)

Thanks to Carol’s question about what to do with the leftover Cornflakes after making my Southern Hashbrown Casserole (apparently her family does not like Cornflakes), I came up with a yummy little treat.

I started with the basic ingredients in Bird Nests and came up with Cornflake Clusters. These little treats are very light and crispy with LOTS of chocolate flavor. How can this be a bad thing?

So, if you are not a fan of a bowl of Cornflakes, give these a try with your leftovers. You will be hooked!

Cornflake Clusters

Ingredients:

  • 6 cups Cornflakes
  • 1  1/2 cups 60% chocolate chips
  • 1/2 cup butterscotch chips

Cover cookie sheets with parchment paper and set aside.

Place Cornflakes in a large mixing bowl. Combine chocolate and butterscotch chips in a microwave safe bowl and microwave on high for 2 minutes. Stir. If chocolate is not completely melted put it back in the microwave for one minute. Stir. If the chocolate is still not completely melted, microwave for 30 seconds at a time until it is smooth. Once the chocolate is completely melted and smooth,  pour over Cornflakes and stir gently to cover the the flakes with the chocolate.

Drop spoonfuls of the mixture onto parchment covered pans. Place in the refrigerator for 20-30 minutes to set. Store in tightly covered container with waxed paper between layers. (in the refrigerator if it’s warm).

Variations:

  • Use 2 cups of chocolate chips and leave out the butterscotch chips.
  • Replace 60% chocolate with milk or semisweet chocolate (although I can’t imagine why you would want to do that:)
  • Replace the butterscotch chips with peanut butter but don’t add the peanut butter until the chocolate is melted.
  • Stir in 1/2 cup of coconut or nuts when you stir in the chocolate

Have fun with this. I know I did!

And Corn Flakes are healthy, right??

Thanks for this, LeAnn. We are not corn flake fans either and I have several recipes that call for the crushed corn flakes and I hate to make them because I know the rest of the box will be thrown out. They evidently either don’t package corn flakes in small boxes anymore or else my grocery store doesn’t carry them. This does sound good.

I have a recipe my family really likes, I cook down 1/2 c corn syrup, 1 cup peanut butter, 3/4 brown sugar and 1 tsp vanilla then add 4 cups of corn flakes crushed to 3 cups, can make into squares or cookies. they are quick and easy.

I use a similar recipe to Barbara’s…we call it cornflake candy in my family…it’s yummy…we don’t crush the cornflakes and just pour it on a cookie sheet and break it into pieces. We use white sugar…I’ll have to try the brown sugar.

You can get crushed cornflakes in the grocery store where the bread crumbs are. It comes in a small box that looks like the cornflake box. They are crushed really fine and make a terrific coating for baked chicken.

I substituted a healthier flax cereal and added some toasted coconut and walnuts – its good! Ghirardeli 60% cocoa is good too.
