Crunchy Herbed Chicken

I love stuffin! It may be my favorite part of Thanksgiving dinner. Well… that and the cranberry sauce. Oh… and the sweet potato casserole. Oh, Oh… and the turkey and the mashed potatoes and the biscuits and the…

Well… I really do love stuffing, or dressing depending on what part of the country you are from. Actually, stuffing goes inside the bird and dressing is cooked on the side. Not that most people go by that. It really boils down to one thing… what your momma called it!

Now don’t think I’ve gone off the deep end. I realize we are far from Thanksgiving. But there is no reason not to enjoy stuffing throughout the year! I probably make a dish with stuffing about four or five times a year.

This recipe isn’t really a stuffing recipe. I just use stuffing mix as the coating for the chicken. It makes a really crunchy crust and, served with cranberry sauce, it’s like a little bit of Thanksgiving dinner in the spring. Loved it!

I would love your prayers! Nick and I are starting to look at colleges. I can’t believe I’m even saying this. My little boy just can’t be this old! I do have to brag a little… we just found out that he is a merit scholar! I am so very proud of him. Hopefully this will help when we apply for scholarships. Anyway… Tomorrow (Thursday) Nick and I will be visiting two colleges on his short list and next Monday we visit two more.

Nick doesn’t really like change and he is very nervous about heading to college in a year (he will be a senior next year). Please pray that visiting colleges will lesson his anxiety. Pray for travel safety and great bonding time for us during our road trips. Please pray for scholarships! And please pray that Nick will know when we walk onto the campus, “OK, this is the one.”

OK – recipe time :)

Crunchy Herbed Chicken

Ingredients:

  • 1 cup sour cream (can use lowfat sour cream or plain greek yogurt)
  • juice of one lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 3 cloves garlic, minced
  • 3 boneless, skinless chicken breasts, cut in half and lightly pounded
  • half of an 8-oz package herb-seasoned stuffing mix, coarsely crushed (I use Pepperidge Farms)
  • 1/4 cup chopped parsley
  • 1/4 cup melted butter (half a stick)

Combine the sour cream, lemon juice, salt, pepper, paprika and garlic. Place chicken in a ziplock bag and pour sour cream mixture over the chicken. Seal and then manipulate with your hands to make sure each piece is coated with the sauce. Lay flat in the refrigerator overnight.

The next night, preheat oven to 300 degrees. Spray a 9×13 baking dish with non-stick cooking spray.

In a shallow dish, combine the crushed stuffing mix and the parsley. Remove chicken from sour cream mixture and completely coat with the crushed stuffing. Place pieces in prepared baking dish, making sure they do not touch, and drizzle with the melted butter.

Bake for 45-50 minutes.

Remove from oven and let sit for 10 minutes before serving. (I like to serve with whole berry cranberry sauce and a green veggie. The colors look awesome on the plate :) )

Just wanted to share how God worked in our daughters life with college. She had applied for a full scholarship to Gardner-Webb a private school where she could complete their RN progam in two years but did not receive the scholarship. She told my husband and I that she knew this was were God wanted her to be and he would provide a way. This is what we had tried to teach her and now we had to have the faith that she did. If she went to a community college there was a 2 year waiting period for the nursing progam. So we stepped out on faith and she was accepted to Gardner Webb. We filled out every scholarship available and God provided. Her first year she received enough for the exact amount for room, board, and tuition ($28,700.00) in scholarships and the only expenses for us the first year were books. She is now a Registered Nurse and taking on line classes to complete her bachelors in nursing. She will will graduate with her bachelors in nursing in December 2011 at the age of 22. The Lord has provided each and every year and she will be graduating with no student loans. Just wanted to share this with you remember that faith as a grain of mustard seed. Your receipes and blog have been a blessing to me and I can’t wait to hear the story of how God works in your son’s life with college. Friends in Christ – Sheila

Oh the college hunt…the joys, the fears, the tears and the MONEY. When God blessed us with four children in five years we were so busy with everyday life that the realization of three in college at the same time for two years in a row never really hit home until now…right in the middle of a challenging economy. Our mantra has been and will continue to be as we are doing the search for our fourth child, “God will open doors needed for you to be where HE wants to you be”. We saw God’s hand in how smoothly everthing transitioned for our oldest when he was accepted to a large public university even though we were constantly being told of many roadblocks we should expect. God’s plan was most evident in our daughter in her search as a collegiate soccer player when He led her to a small Christian college outside of Chicago. She had been recruited by large schools, but in the end she has said time and again…she is so thankful God led her to this school…so much that her younger sister will be joining her next fall on the soccer field. One more to go…and she’s the picky one..it will be exciting to see where God leads her in Fall of 2012.

Enjoy the search and the time with your son … it’s amazing at all the special memories you will be making!

I just got around to reading this recipe today and wanted to add my prayers for you and Nick as you begin this journey. I have three children and my youngest will be graduating high school in one month! My how quickly the time goes once they get to this age. I know God will guide you and Nick as he makes a decision about college. You have plenty of time and everything will turn out just the way God planned it. Good luck to you both!

I just made this for supper and it was yummy! The chicken was so tender you could cut it with a fork.
