Lite Lemon Fluff Pie

For those of you looking for a lighter dessert option for your Easter dinner or summer BBQ’s, this is a winner! This pie is cool and refreshing and I promise you won’t miss the calories! I discovered the original version of this recipe on a Weight Watcher’s site about five years ago. (I added fresh lemon juice and zest for more lemony flavor – substitute a lime or an orange if switching the flavor.)

You can make this pie in just about any flavor but I have found that the citrus flavors definitely work the best so stick with orange, lemon or lime. You can also go with the full fat versions of the ingredients or the lite or fat free versions. I stick with the “lite” versions and I honestly can’t tell much of a difference. This dessert is a hit with the gals in the office and it will be a hit with your peeps too!

Lite Lemon Fluff Pie

Ingredients:

  • 1/4 cup boiling water
  • 3-ounce package sugar-free lemon Jell-O
  • 2 containers (6-8-ounce each) lemon yogurt
  • 1 lemon (zest and juice)
  • 8-ounce carton Cool Whip Lite
  • Food coloring (optional)
  • 1 reduced-fat graham cracker crust
  • Additional lemon(s) for garnish (optional)

In a large mixing bowl, dissolve the Jell-O in the boiling water. Whisk in the yogurt. Zest the lemon and add to the yogurt mixture. Squeeze the juice out of the zested lemon and whisk into the mixture. Fold in the Cool Whip. Stir in a few drops of food coloring for a deeper color, if desired. Spoon mixture into pie crust. Cover and chill for at least two hours to set. (I make it the night before I want to serve it.) To serve, garnish with fresh lemon slices. Store any leftovers covered in the refrigerator.

LeAnn, I just wanted to say “thank you” for including lite recipes. I am trying to follow a “South Beach” kind of plan so I REALLY appreciate any recipes that help me stick with that. You’re a blessing!

LeAnn-This looks great! I do have a question….. I have another recipe that calls for lemon yogurt, but I can not find it anywhere! Do you have any suggestions?

Hi Casey,

At my grocery store (Harris Teeter) they sell three or four brands of lemon yogurt. If you can’t find lemon but you can find lime, follow the recipe but replace the jello and yogurt with lime flavored, and replace the lemon with a lime. Actually, lime is my favorite flavor for this pie :) Lemon is a close second.

I made this pie for Easter and it was a big hit! everyone loved it and it was so light after the big meal. I was confused on the size of the jello package as they don’t make a 3 oz sugar free size…I got the 4 serving size and that seemed just right. thanks for the great “light” recipe.
