Sugar Snap Saute

I love sugar snap peas! They are crisp and sweet and they look bright and colorful on any plate. And… even Nick likes them! In fact, as I was sauteing them, he was snitching them out of the skillet!

My favorite ways to prepare most veggies is to roast, grill or saute them quickly. These techniques work for most veggies and they are very easy to do. I love to add a roasted, grilled or sauteed veggie to any meal, but especially to a heavy holiday meal. It lightens up your plate just a bit and offers a healthier alternative to the heavy casseroles. Just remember to fill your plate up with lots of the veggies so you aren’t tempted to overdo on the cheesy casseroles :)

Sugar Snap Saute

Ingredients:

  • 2 teaspoons butter
  • 1 pound sugar snap peas, rinsed, trimed and de-stringed
  • 1 clove garlic, minced
  • salt and pepper to taste

Place butter in skillet over medium to medium-high heat. As soon as butter is melted, add the sugar snap peas and the garlic. Saute, stirring frequently for about 8 minutes or until crisp tender (or to desired doneness). Remove from heat and sprinkle with salt and pepper to taste. Serve.

Now how easy is that?

LeAnn, do you think frozen sugar snap peas would work OK with this recipe? I have some in the freezer even now – would you thaw first or cook longer? (I don’t think I’ve ever bought them fresh – when are they usually in season?)
