Quinoa Salad Primavera

If you haven’t tried Quinoa, this is a great recipe to start with. Quinoa is a great source of dietary fiber and protein, and it is gluten-free. Oh… and it’s tasty!

Consider making Quinoa Salad Primavera to go along with your Memorial Day cook out! It would make a unique and delicious addition to your weekend gathering. It’s colorful. It’s good for you (although you don’t have to mention that to the kids). It’s different. It goes with just about everything. And, trust me, everyone will want the recipe!

Quinoa Salad Primavera

Ingredients:

  • 1 cup Inca Red Quinoa
  • 2 cups water
  • 5 -6 cups chopped mixed raw veggies (carrots, celery, squash, green onions, cucumbers, orange bell pepper, peas, broccoli and cherry tomatoes)
  • 1/3 – 1/2 cup vinaigrette

Combine quinoa and water in a medium saucepan and bring to a boil. Reduce heat. Cover and simmer 15 minutes. Remove from heat and set aside to cool.

Chop all your veggies into small bite-size pieces. Add to cooled quinoa.

Stir in vinaigrette.

Cover and chill overnight before serving.

What type of store do you get the Inca Red Quinoa?

Hi Sandra,

I find it at my local Harris Teeter, near the rice :) If they don’t have Inca Red, it’s ok to use the regular quinoa.

Thank you SO MUCH Leann!! This is making my mouth water just reading it!! Would fresh asparagus work as well? This sounds like a great salad to use with the fresh veggies that need to be eaten. I am hoping my husband will enjoy this!

Absolutely! You can use any veggies that you like. Asparagus is one of my favorite veggies. It would be great in this salad!

Do you have a recipe for a viniagrette? Would a bottle of italian salad dressing work, or do you have a more organic recipe?

My basic vinaigrette recipe is:

1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
3 tablespoons cider vinegar
1 tablespoon dijon or grainy mustard
Salt and pepper to taste

Sometimes I add finely chopped shallotts and/or minced garlic. You can also add any herbs you like.
