Marble Cheesecake with Dark Chocolate Ganache

Now for the something chocolate…

I made this yummy marble cheesecake for the last day of choir practice for the season. Now, before you think that I have any musical talent, let me set you straight. I do not sing. I am not part of the choir. I simply feed them. I love how beautifully they lead me and our congregation into a sweet place of worship, so I love on them through food. It’s my way of showing appreciation.

Marble Cheesecake with Dark Chocolate Ganache

Ingredients:

Crust:

  • 1  9-ounce package chocolate wafers, processed to crumbs
  • 6 tablespoons butter, melted

Preheat oven to 350 degrees. Spray 9-inch springform pan lightly with non-stick cooking spray. Combine crumbs and butter. Transfer to springform pan and press onto bottom and 1/2 inch up the sides to form the crust. Bake for 5 minutes. Remove from oven and cool completely before filling.

Filling:

  • 10 ounces dark chocolate chips (ghiradelli is always my choice)
  • 4  8-ounce packages cream cheese at room temperature
  • 1  1/4 cups sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup sour cream, room temperature
  • 3 eggs, room temperature

Reduce oven temperature to 325 degrees.

Melt the chocolate chips in the microwave or over a double boiler. Set aside to cool. (You want it warm but not hot.)

In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy and light (about 3 minutes). Beat in the vanilla extract and sour cream. Add the eggs one at a time, beating after each addition just until incorporated.

Reserve 1 1/2 cups of the batter into another bowl and slowly blend in the melted chocolate.

Pour the remaining batter into the springform pan. Drop spoonfuls of the chocolate batter on top. Take a knife and gently swirl the batters. Do not over swirl or you will lose the marble effect.

Bake in preheated oven for 1 hour and 15 minutes. Turn oven off but leave cheesecake in the oven for 1 hour.

Remove from oven and place on a wire rack. Take a butter knife and run in around the edge to loosen from the side. Let cool completely.

Dark Chocolate Ganache:

  • 6 tablespoons heavy cream
  • 6 ounces dark chocolate chips

Heat heavy cream to just before boiling. Add chocolate chips and let sit for 5 minutes. After 5 minutes, whisk together until you have a smooth glaze.

Remove rim from cooled cheesecake and place on a serving platter. Spoon chocolate ganache over cheesecake and garnish as desired (I like to garnish with berries).

Love cheese! Sooo hard to choose just one, so I will narrow it down to one of my first loves… the grilled cheese sandwich. Very first thing I learned to make in home ec. and a tried and true classic for cold winter days. I can’t wait to read Mary Beth’s book!

I tried to comment on this twice yesterday, and got an error both times, so I should get extra points for effort.

Our favorite go-to snack is a cheese stick wrapped with a piece of lean lunch meat. It is quick, easy, and protein rich.

My favorite dip is 2 blocks of Philly cream cheese, and 1 can of rotel tomatoes blended together. Yum. Yum.

Your cheese cake looks like it would be my favorite cheesy thing, however. MMMmmm.

When i was a kid the only cheese I’d ever eaten was Velveeta! As an adult, I went into a little cheese shop called Wilson’s in Pinconning, MI. and was introduced to CHEESE. Now part of the trip to the lake involves a stop for 7 yr old white cheddar or some sharp cheddar to pair with pickled bologna – its become tradition for our family.

We are big cheese fans in this house. We have friend who live in Wisconsin and they bring us cheese whenever we see them. Our next cheese delivery is next week! Woohoo!

Favorite cheese food…uh…there’s too many to choose. But today, I’m craving some yummy, gooey homemade mac & cheese, so I’ll say that. :)

I love loaded “cheese” fries. There is nothing better than french fries, tons of cheese (cheddar and others -pepper jack or mozzarela), bacon crumbs and either sour cream or ranch dressing. Yum yum.

I love cheese.. all kinds.. right now feta was the best I have had all week.. but let me tell you when I lived in nepal as a missionary for 2 years a few years ago cheese was a HUGE commadity.. you could not find anything but yucky yak cheese. (not recommended) except for the few shipments that would come in.. and let me tlel you missionary rush on aisle 1 of 2 aisles the grocery store when cheese came in.. hahah.. that or dr. pepper. When we went to thailand we would freeze the cheese and bring it back in our suitcase! and occasionaly we would spend 20 bucks for a small thing of cream cheese when it would come in :-0) blessings Jenn

Recipe question: I was at the store looking for chocolate wafers for the crust. Are they the ones like Nilla Wafers, but chocolate, or are they the ones like sugar wafer cookies?

I am from Wisconsin…I heart cheese! One of my favorite ways to incorporate cheese is by using smoke gruyere cheese on a tuna casserole- SO delicious, no other cheese would do.
