OK – for today’s recipe…
Since I am smack in the middle of working on our conference notebook, I’m going to share a short and sweet recipe today. This is one of my go-to recipes for when I’m in a pinch and need an easy and tasty meal for company. It works in the oven or on the grill. Serve with a green veggie and a side dish or a cool salad and you have a complete, colorful meal that will definitely impress!
You may already have the ingredients on hand for this easy chicken dish. Honestly, this is so simple that it doesn’t even need a recipe. But… since this is a cooking site, I’m going to spell out the recipe. Don’t blink or you will miss it!
Orange Barbeque Chicken
Ingredients:
- an 8-ounce jar of orange marmalade
- 1 cup of your favorite barbeque sauce
- a pinch or more (to taste) of cayenne pepper (optional)
- Chicken thighs, boneless and skinless
Combine marmalade, barbeque sauce and cayenne. Pour over chicken and let marinade for an hour (or overnight if you have the time).
Remove from marinade and broil in oven for 10 minutes per side or grill outdoors (my favorite).
I love this with a fresh ear of corn on the cob and a fruit salad for a casual dinner. Very colorful
Note: This sauce is also really tasty on pork (ribs, chops or tenderloin), shrimp skewers or salmon!

Think this would work in a crock pot?

It sure will. I like to make a layer of thinly sliced onion in the bottom of crockpot and then lay a pork roast on top. Combine sauce ingredients and pour over roast. Cover and set on low for 8 hours. Meat will fall apart. Works with chicken but use dark meat and cook less time.
