Berry Mango Salsa

This is just plain gorgeous! Seriously! Salsa is very versitle and this berry version is no exception. I spooned it over broiled Chilean Sea Bass but you can use this as an appetizer with pita chips, spoon it over grilled chicken or turn it into a salad by spooning it over lots of greens. Have fun!

Berry Mango Salsa

Ingredients:

  • 1/2 red bell pepper, seeded and finely chopped
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 1 mango, peeled and chopped
  • 1 1/2 cups mixed berries (whatever looks good)
  • 1 lime (juice and zest)
  • 1 teaspoon freshly grated ginger
  • 1/3 cup chopped fresh cilantro

Combine all ingredients. Cover and chill until ready to serve.

(Only 20 calories per 1/4 cup!)

This sounds wonderful except I’m not a fan of ginger. Is there another spice I could substitute with this recipe?

I haven’t prepared many recipes with mango, but I am sure going to try this one, it looks so delicious! Maybe when things slow down for you, could you share your recipe for the fish? Other than salmon, I don’t have very good luck with fish…
