Since we went over-the-top decadence with the last berrilicous recipe, I thought I would bring us back to reality with something a little less fattening
However, this is very sweet and berry good!
This is very easy to do and definitely pretty enough to serve to company or a girly luncheon!
Grilled Chicken and Berry Salad
Per Serving:
- 2 cups mixed baby greens
- 1 grilled chicken breast, sliced
- 4 strawberries, quartered
- 1/4 cup blueberries
- 1 tablespoon crumbled gorgonzola, blue or goat cheese
- 2 tablespoons toasted almond slivers
- 2 teaspoons good quality, low or no sugar added raspberry preserves
- 4 teaspoons extra virgin olive oil
- 2 teaspoons cider vinegar
- 2 teaspoons balsamic vinegar
- salt and pepper to taste
Arrange lettuce on dinner plate. Arrange sliced chicken down the center. Sprinkle with berries, cheese and almonds. In a small bowl combine remaining ingredients with a whisk. Drizzle over salad.
