Grilled Chicken and Berry Salad

I am checking into the hotel today so I can start setting up for our annual conference. If you are attending this year, please find me and give me a hug. I will be crazy busy but I’m never too busy for hugs!

Since we went over-the-top decadence with the last berrilicous recipe, I thought I would bring us back to reality with something a little less fattening :) However, this is very sweet and berry good!

This is very easy to do and definitely pretty enough to serve to company or a girly luncheon!

Grilled Chicken and Berry Salad

Ingredients:

Per Serving:

  • 2 cups mixed baby greens
  • 1 grilled chicken breast, sliced
  • 4 strawberries, quartered
  • 1/4 cup blueberries
  • 1 tablespoon crumbled gorgonzola, blue or goat cheese
  • 2 tablespoons toasted almond slivers
  • 2 teaspoons good quality, low or no sugar added raspberry preserves
  • 4 teaspoons extra virgin olive oil
  • 2 teaspoons cider vinegar
  • 2 teaspoons balsamic vinegar
  • salt and pepper to taste

Arrange lettuce on dinner plate. Arrange sliced chicken down the center. Sprinkle with berries, cheese and almonds. In a small bowl combine remaining ingredients with a whisk. Drizzle over salad.
