Margarita Pie

This frozen pie can be made ahead and it will make a cool and refreshing dessert for your Labor Day cook out. This was one of my husband’s favorite desserts… and he wasn’t a margarita fan. He just loved pretzels and limes so I guess the combination was  a winner with him.

In addition to being a great ending to a cookout menu, this pie is also great after a hot and spicy meal. The cool ice cream and sherbet really soothes your tongue!

This recipe contains tequila but you do not have to use it. I have made the pie with and without it and it is good either way. If you use the tequila, make sure you have a separate dessert to offer!

Regarding the tequila…

I hesitated to post this recipe since it includes the optional addition of tequila and I know that some of you may believe that drinking alcohol is a sin. I wanted to address this issue as I want to be upfront about my own beliefs.  I, personally, do not believe that the occasional use of alcohol is a sin. Therefore, from time to time I do use a small amount of alcohol in a recipe. I believe that drinking in excess or drunkeness is a sin. I do neither. My only excess is dark chocolate. I’m dealing with it :)

Margarita Pie

Ingredients:

  • 1 1/4 cups crushed pretzel sticks
  • 1/4 cup sugar
  • 1 stick butter (1/2 cup), melted
  • 4 1/2 cups vanilla ice cream
  • 2/3 cup frozen margarita mix concentrate, thawed
  • 2 1/2 cups lime sherbet
  • 3 tablespoons tequila (optional)
  • whipped cream
  • lime slices for garnish (optional)

Spray a pie dish with butter flavored non-stick cooking spray or “grease” with softened butter. Combine crushed pretzels, sugar and butter. Form crust into prepared pie dish and freeze for one hour to set.

Let ice cream and sherbet sit on counter for 10 minutes to soften slightly. Mix margarita mix into the vanilla ice cream. Mix tequila (if using) into the lime sherbet. Place both in freezer until almost firm. Drop spoonfuls of lime sherbet over the top of vanilla ice cream mixture. Gently fold together, just until you achieve a marbled effect. Immediately spoon into pie shell. Cover with plastic wrap and place in freezer for several hours.

To serve, remove from freezer and let stand at room temperature for 15 minutes. Garnish with whipped cream and lime slices. (A pretzel would be cute, too.)

LeAnn, this one sounds wonderful, too. And thank you for sharing your point of view about the use of alcohol. I know it varies greatly from person to person. My excess is pretty much anything sweet. :-)

I have been guilty of hiding my beliefs so as to not rock the boat. I care too much about what others think of me. I too believe that the occasional use of alcohol, even dare I say a glass of wine or frozen margarita, is OK. I’ve not been convicted by my Lord on this, but boy have I from a select few people.
I can’t wait to try this Margarita Pie that sounds so delicious. My husband may even fire up the Margaritaville frozen concotion maker that is hidden in the cupboard! :-) Hey; it makes the kids slushies too! LOL

Amen! I have read about drunkenness and alcohol in excess, but never do I remember Jesus saying “no–period”. I rarely consume alcohol, mind you; however, I do enjoy the occasional spiked beverage. I also appreciate the flavors that various alcoholic beverages bring to a dish (and the alcohol cooks off).

Margaritas are one of my favorite drinks since lime is one of my favorite flavors. I make ‘em as cocktails and mocktails. I also have a fabulous Citrus Chicken Cacciatore (sp?) recipe that I developed over the summer. I forsee a new summer menu that includes:

Fresh Baked Tortilla Chips with my homemade Salsa and Guacamole

Citurs Chicken Cacciatore over brown rice with grilled (or roasted) vegetables

And for dessert…. Oh, you got that right… LeAnn’s MARGARITA PIE!

I AGREE WITH YOU 100% ABOUT ALCOHOL. BECAUSE OF OF THE SUGAR CONTENT FOR HEALTH REASONS WE LIMIT OUR INTAKE BUT. SO GLAD YOU SHARED YOUR VIEW. I FEEL RELIVED OTHER CHRISTIAN FEEL LIKE IT DO. This definitely looks like a treat for this weekend’s BBQ! We share the same philosophy on alcohol…I enjoy cooking with sherry & shallots, the combination adds amazing flavor to sauted chicken. We also enjoy a glass of wine with our friends and family from time to time.

Knew better than to have the computer sitting there while I was making the pie! Splashed a little ice cream mixture onto the keys! You’d have gotten a good laugh as I bent down to lick it off the computer! slurp!! My kids got a good laugh! YUM!! Can’t wait to enjoy a WHOLE slice tonight after dinner!

Our previous pastor used to say that some people feel they are holier than the Bible because Jesus Himself blessed the wine that was served at the wedding of Caana. There are also references about wine and how it is a gift from God. Yes, we are to be filled with the Spirit and not to get drunk but ….it is certainly something that we can all consider and think about.

Meanwhile, I can’t wait to try this refreshing sounding recipe!
