Blueberries were on sale so I felt the need to purchase them
I do love a bargain! I have been wanting to try some type of blueberry bar so I combined a few different recipes that I had in my file and then added some of my favorite flavors. I think they came out pretty good so I’m sharing! I’m sure you could substitute other berries with excellent results… maybe not strawberries, though.
Experiment and have some berry good fun! Make a batch for someone that needs a little love. Treat bars are filled with love. It’s a special and necessary ingredient! I left this batch for my house sitter last week. I thought I would come home to at least ONE BAR… but NO! The platter was clean. Guess that means they were pretty tasty!
Blueberry Crumble Bars
- 4 cups fresh blueberries
- 1/2 cup sugar
- 4 teaspoons cornstarch
- dash of cinnamon
- 1/4 teaspoon salt
- juice of one lemon
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 cup rolled oats (not instant or quick)
- 1/2 cup sugar
- 1/2 cup light brown sugar, packed
- 1/4 teaspoon salt
- 1/2 teaspoons cinnamon
- 2 sticks butter (1 cup), cold and cut into small cubes
Preheat oven to 375 degrees. Line a 13×9 inch baking dish with foil so that it hangs over the short sides (for easy lifting later). Spray foil with non-stick cooking spray.
In a medium bowl, combine berries, sugar, cornstarch, cinnamon, salt, and lemon juice. Set aside but stir occasionally to dissolve and distribute the sugar, as you put together the rest of the ingredients.
In a large bowl, combine flour, baking powder, oats, sugar, brown sugar, salt and cinnamon. Add butter and blend with pastry blender or two knives until the mixture is crumbly.
Press half of the mixture into the bottom of foil-lined baking dish. Stir blueberries again and spoon evenly over crust. Crumble remaining flour mixture over the blueberries.
Bake for 45 minutes or until the top is golden brown. Remove from oven and let cool on a wire rack. Once completely cooled, lift out of pan using foil as handles. Place on cutting board and cut into squares.

These do sound yummy. My 16 year old son would love these.I agree with Carol, what a blessing Michelle you must be to the guys/gals at the fire station. What a ministry! You go girl.
Oh I can’t wait to make these tomorrow! My little boy loves blueberries. And Michelle I may have to steal that idea. Our local FD is right down the road.I am sure they would appreciate some yummy treat.
