Blue Cheese Dip

I know I just shared an appetizer recipe with you but… with Superbowl weekend coming up, I thought I would go ahead and share a few more in the next couple of weeks so you will be ready for game day munchers.

Today I want to share one of my favorite dip recipes. I have to admit, I am not a fan of blue cheese. But… I really love this dip. I think it’s because there aren’t big chunks of blue cheese to bite into. Interestingly, I have discovered that this dip is a hit with blue cheese lovers and those who, like me, are not lovers of the blue stuff!

I like to serve this with assorted raw veggies. But it’s also good with thick-cut chips (delicate chips will break in this thick and rich dip) or even buffalo wings.

You can make this dip a few days before serving. I like a recipe that I can make in advance. It sure does help on game day!

Sorry I forgot to take a photo of this one. But… it’s dip… you know how it’s supposed to look. White, creamy and loaded with fat :) (Although you can reduce the fat by using low-fat sour cream and mayo!)

Blue Cheese Dip

Ingredients:

  • 4 ounces (half a brick) cream cheese at room temperature
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon worchestershire sauce
  • 4 ounces blue cheese crumbles
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped chives (use fresh if you have them)

Beat the cream cheese until it is smooth and creamy. Add the sour cream, mayonnaise and worchestershire sauce and continue beating until well combined. Set aside a little of the blue cheese to use as a garnish and add the rest to the creamy mixture. Beat until the blue cheese has been blended into the cream cheese mixture and only very small bits of cheese can be seen. Add the pepper and the chives and beat only until blended.

Cover and store in the refrigerator for at lease two hours so flavors can meld. When ready to served, transfer the dip to a serving dish and top with the reserved blue cheese crumbles. Serve with assorted raw veggies or hearty chips.

If I were there, I’d whip up a batch of this dip and hope it were thick enough to hold up a candle ’cause I’d stick one in it and sing Happy Birthday to YOU!!!! Yes people, it is LeAnn’s birthday. :-) (and she’ll probably throttle me for telling you) Love you LeAnn!
